Chicken Curry works for me!

Since Sean's in a health kick this year, I've been scouring my local library trying to find healthy cookbooks. One book in particular - "The Glycemic Index Diet" - has had some fantastic tips, notes, and especially recipes! I've found several recipes that aren't too expensive to try, and one in particular is just delicious and simple!

Chicken Curry

- Vegetable oil cooking spray

- 1 medium onion, sliced

- 1-2 Tbs curry powder (or to taste)

- 1 cup sliced carrots

- 1 cup celery (I omit this)

- ½ cup basmati rice

- 1 cup water (I use about 1 1/3 to 1 ½ cup)

- 1 medium apple, chopped (I peel mine, but you don’t have to)

- ¼ cup raisins

- 8 ounces chicken breast, cooked

1. Spray a nonstick pan with cooking spray, then place it over medium heat. Add the onion and curry powder, stir to coat the onion with the curry, cook for 1-2 minutes.

2. Add the carrots and celery stir to mix, then cook for 1-2 minutes.

3. Add the rice, apples, raisins, and water to the vegetables. Stir to mix. Cover the pan, reduce the heat, and let simmer until the liquid is absorbed (20-30 minutes).

4. Add the cooked chicken and cook until heated through, about 2 minutes.
