
I found this delicious recipe in a book I got from the library called "Just the Two of Us." It's a Betty Crocker recipe book that has little meals rather than the large ones I'm used to cooking for my family when I lived with them, so it's perfect! And since Sean and I are trying to eat better (Sean's better at it than me haha), this is great because it also has the Daily Value info on the bottom of each menu page. Sweetness! Haha. And what I liked BEST was that I had everything - no going out and getting any special ingredients like lemon peel or something :P
So, without further ado, (Broiled) Dijon Burgers:
- 1 whole egg (or 2 egg whites)
- 1 tablespoon milk
- 1 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup bread crumbs
- 2 tablespoons (about 1/4 of a medium) finely chopped onion
- 1/2 lb ground beef (the leaner, the better for you!)
**Note, these are supposed to be BROILED. However, I thought it would be simpler and better for you if we used the George Foreman Grill we own - it worked out very well!
1. Set oven control to broil. Spray broiler pan rack with cooking spray.
2. In small bowl, mix egg, milk, mustard, salt, and pepper. Stir in bread crumbs and onion. Stir in beef. Shape mixtures into 2 (**I made 4) patties, each about 1/2 inch thick.
3. Place patties on rack in broiler pan. Broil with tops about 5 inches from eat about 10 minutes, turning once, until meat thermometer inserted in center of patties reaches 160F. Serve on buns (**with lettuce and tomato, yum!)
So, to recap my changes:
**I used our George Foreman Grill and let them sizzle for about 10 minutes on medium. I checked it by cutting into it a little with my plastic spatula and making sure it wasn't pink at all!
**I used 1/4 of a medium onion; it tasted great to us, but if you're not a huge semi-crunchy onion fan, this could be minimized:)
**There was a LOT of hamburger mix when I put everything together, so I made 4 patties. When they were put into the George Foreman Grill, they were flattened a bit and still ended up just as large as McDonalds' hamburgers:) You might even get 5 or 6 out of the mix depending on how small you'd like your burgers to be!
**I put lettuce and tomato on my burger just because I had some on hand. Since I was cleaning and cutting these veggies anyway, I used some and made a salad on the side. Delicious!
